VINEYARDS
From selected vineyards in a hilly area in the Municipality of Gambellara. The vineyards are at least 20 years old and their soil is basaltic.
These vineyards were traditionally used for the production of Vin Santo wine and the grapes are picked when fully ripened and the skin has the typical red colouring.

VINIFICATION
White wine fermentation. The grapes are destemmed and the skin contact takes short time at a temperature of about 10°C, then undergo soft pressing. Fermentation takes place in steel tanks at a controlled temperature of about 14-16° C. It is kept on fine lees for about 3-4 months.

CHARACTERISTICS

• Taste: great balance between sweetness and freshness, great body and delicate smoothness.

FOOD MATCHES
Perfect as aperitif, it also matches fish dishes, egg pasta vegetables and povetry meat.

SERVING TEMPERATURE
Serve at 8°-10°C.
